In order to be kind to the environment we also need to waste less food, I found this recipe Date-Cherry-Ginger-Orange-Coconut-Chia Bars and adapted it to use my left over baking ingredients from the holidays. I used dates, glace fruit, chia, mango juice, cocoa powder, and mixed them in the blender to make some yummy bars. They were sticky so I took them out and rolled them in oatmeal to make healthy date balls instead.
I also made a fine meal using my new "Minimalist Baker Cookbook" Angel Hair Pasta with Harissa Romesco and enjoyed some roasted fennel, seasonal veggies are great! This was an enjoyable cruelty free meal.
